Ingredients

  • 250 grams fresh beetroot, peeled and grated
  • 150 grams all-purpose flour
  • 100 grams rolled oats
  • 100 grams brown sugar
  • 100 grams unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 50 grams chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a 20cm x 20cm (8-inch x 8-inch) baking pan with parchment paper.

Step 2

In a large mixing bowl, combine the grated beetroot, melted butter, brown sugar, eggs, and vanilla extract. Mix well until fully incorporated.

Step 3

In a separate bowl, whisk together the all-purpose flour, rolled oats, baking powder, baking soda, ground cinnamon, and salt.

Step 4

Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

Step 5

If using, fold in the chopped walnuts to the mixture.

Pour the batter into the prepared baking pan, spreading it evenly with a spatula.
