Ingredients

  • 1 cup Raw beetroot, peeled and grated
  • 1 cup Canned chickpeas, drained and rinsed
  • 0.5 cup Red onion, finely chopped
  • 2 cloves Garlic cloves, minced
  • 0.5 cup Fresh parsley, chopped
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Baking powder
  • 4 tablespoons All-purpose flour or chickpea flour
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil

Directions

Step 1

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a food processor, combine the grated beetroot, chickpeas, red onion, garlic, and parsley. Pulse until the mixture is coarsely combined.
