Ingredients

  • 200 g soba noodles
  • 250 g beef sirloin
  • 1/4 head green cabbage
  • 1 medium carrot
  • 1 medium onion
  • 1 medium green bell pepper
  • 1 inch ginger
  • 2 pieces garlic cloves
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 2 tablespoons fish sauce
  • 1 teaspoon sesame oil
  • 0.25 teaspoon black pepper

Directions

Step 1

Begin by preparing the ingredients: Thinly slice the beef sirloin into bite-sized strips. Chop the cabbage coarsely. Peel the carrot and cut it into julienne strips. Slice the onion and green bell pepper thinly. Grate the ginger and finely mince the garlic cloves.

Step 2

Cook the soba noodles according to the package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.

Step 3

In a small bowl, combine honey, rice vinegar, fish sauce (serving as a soy sauce alternative), sesame oil, and black pepper. Mix well to make the sauce and set aside.

Step 4

Heat a wok or large frying pan over medium-high heat. Add one tablespoon of olive oil, then add the beef strips. Stir-fry until the beef is browned and cooked through, about 3-4 minutes. Remove the beef from the pan and set aside.

Step 5

In the same pan, add the remaining tablespoon of olive oil. Add the garlic and ginger, stir-frying quickly to release their flavors, about 30 seconds.

Step 6

Add the onion, carrot, cabbage, and green bell pepper to the pan. Stir-fry the vegetables until they start to soften but still retain some crunch, about 5 minutes.

Step 7

Return the cooked beef to the pan and add the soba noodles. Pour the prepared sauce over the mixture.

Step 8

Toss everything together to ensure the noodles, beef, and vegetables are evenly coated with the sauce and heated through, about 2-3 minutes.

Step 9

Remove from heat and serve the Beef Yakisoba hot. Enjoy your soy-free meal!
