Ingredients

  • 1 pound Beef sirloin
  • 1 large Red bell pepper
  • 1 large Green bell pepper
  • 1 large Yellow bell pepper
  • 1 large Onion
  • 4 small Garlic cloves
  • 1 inch Ginger root
  • 2 tablespoons Olive oil
  • 0.5 cup Beef broth
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Honey
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water
  • 2 stalks Green onions

Directions

Step 1

Slice the beef sirloin into thin strips against the grain and set aside.

Step 2

De-seed and slice the red, green, and yellow bell peppers into thin strips.

Step 3

Thinly slice the onion. Mince the garlic and ginger.

Step 4

Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of olive oil.

Add the beef strips to the skillet, season with salt and black pepper, and cook until browned on both sides, about 3-4 minutes. Remove the beef and set aside.
