Ingredients

  • 8 oz beef sirloin steak
  • 12 sheets rice paper sheets
  • 1 cup jasmine rice
  • 2 cups water
  • 2 tablespoons vegetable oil
  • 2 cloves garlic cloves, minced
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1 cucumber, thinly sliced
  • 1 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoons fish sauce
  • 1 tablespoon honey
  • 1 teaspoon black pepper

Directions

Step 1

Cook the jasmine rice: Rinse the rice under cold water until the water runs clear. Combine the rice and 2 cups of water in a medium saucepan. Bring to a boil over high heat, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed and rice is tender. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and let it cool to room temperature.

Step 2

Prepare the beef: Slice the beef sirloin steak into thin strips. In a medium bowl, combine the beef strips with minced garlic, black pepper, lime juice, fish sauce, and honey. Mix well until the beef is evenly coated. Allow it to marinate for at least 15 minutes.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the marinated beef slices and stir-fry until they're browned and cooked through, about 4-5 minutes. Remove from the skillet and set aside.

Step 4

In the same skillet, add the remaining tablespoon of vegetable oil and stir-fry the sliced red bell pepper and julienned carrot for about 2-3 minutes until just tender.

To assemble the rolls, fill a large shallow dish with warm water. Dip one rice paper sheet in the water until it becomes pliable, about 15-20 seconds, then lay it flat on a clean surface.

Step 6

In the lower third of the rice paper, place a small amount of cooked rice, a few strips of beef, and a small portion of the red bell pepper, carrot, cucumber slices, and chopped cilantro.

Step 7

Fold the bottom edge of the rice paper over the filling, then fold in the sides and roll tightly to form a roll. Repeat the process with the remaining ingredients.

Step 8

Serve the beef rice rolls fresh with a side of lime wedges or your favorite dipping sauce. Enjoy!
