Ingredients

  • 500 g Rice vermicelli noodles
  • 2 tbsp Sunflower oil
  • 4 cups Water
  • 0.5 tsp Salt
  • 2 cloves Garlic
  • 4 stalks Green onions
  • 1 bunch Fresh mint
  • 1 bunch Fresh cilantro
  • 1 Lime

Directions

Step 1

Begin by boiling 4 cups of water in a large pot. Add 0.5 tsp of salt to the boiling water.

Step 2

Once the water is boiling, add the rice vermicelli noodles. Cook for 4-5 minutes or until the noodles are tender.

Step 3

Once cooked, drain the noodles in a colander and rinse under cold running water to stop the cooking process. Allow to drain completely.

Step 4

In a small saucepan, heat 2 tbsp of sunflower oil over medium heat. Mince 2 cloves of garlic and add to the pan, sautéing until aromatic and lightly golden, about 1 minute.

Step 5

Slice the green onions thinly and add to the oil, cooking briefly just until wilted, about 1-2 minutes.

Step 6

On a serving platter, arrange round portions of the vermicelli noodles into small, flat cakes, resembling woven mats. Drizzle the garlic and onion oil mixture evenly over the vermicelli cakes.

Step 7

Wash and pluck the fresh mint and cilantro leaves from their stems. Add the herbs generously over the vermicelli cakes as a garnish.

Step 8

Cut the lime into wedges and serve alongside the Banh Hoi for squeezing over just before eating.

Step 9

Serve the Banh Hoi with your preferred soy-free protein and additional fresh herbs to create a full meal. Enjoy the delicate flavors and textures of this traditional Vietnamese dish.
