Ingredients

  • 2 pounds Whole red snapper
  • 3 tablespoons Olive oil
  • 4 Garlic cloves, minced
  • 2 Lemon
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Fresh thyme leaves
  • 1 teaspoon Sea salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup White wine
  • 1 tablespoon Fresh dill, chopped

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.

Step 2

Rinse the snapper under cold water and pat dry with paper towels. Make three diagonal slashes on each side of the fish, about 1 inch apart.

Step 3

In a small bowl, mix the minced garlic with the olive oil. Squeeze the juice of one lemon into the mixture and stir well.

Step 4

Rub the garlic and olive oil mixture generously over the snapper, ensuring it gets into the slashes and the cavity of the fish.

Season the snapper inside and out with sea salt and black pepper.
