Ingredients

  • 1 kilogram Chicken (thighs, bone-in, and skin-on preferred)
  • 0.5 cup Coconut aminos
  • 2 tablespoons Dark molasses
  • 2 tablespoons Lemon juice
  • 4 large Garlic cloves, minced
  • 2 Shallots, thinly sliced
  • 1 tablespoon Fresh ginger, grated
  • 3 tablespoons Coconut sugar
  • 0.5 cup Water
  • 1 Red chili, sliced (optional for heat)
  • 2 tablespoons Cooking oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Cilantro, chopped (for garnish)

Directions

Step 1

Clean and pat dry the chicken thighs. Season them with salt and black pepper.

Step 2

In a large pan, heat the cooking oil over medium heat. Add the chicken, skin-side down, and sear until golden brown, about 5 minutes per side. Remove the chicken and set aside.

Step 3

In the same pan, add the shallots and sauté until they become translucent. Add the minced garlic and ginger, then sauté for another 2 minutes until fragrant.

Step 4

Stir in the coconut sugar, coconut aminos, dark molasses, lemon juice, and water. Bring the mixture to a gentle simmer.

Return the chicken to the pan, coating it in the sauce. If using, add the sliced red chili for a hint of heat.

Cover the pan, lower the heat, and let the chicken simmer for about 30 minutes, or until cooked through and tender. Stir occasionally to prevent sticking.
