Ingredients

  • 1 kg Chicken pieces (legs, thighs, wings)
  • 400 ml Coconut milk
  • 2 teaspoons Turmeric powder
  • 2 teaspoons Coriander powder
  • 2 inches Galangal, finely sliced
  • 2 stalks Lemongrass, smashed
  • 3 Kaffir lime leaves
  • 4 Garlic cloves, minced
  • 4 Shallots, finely chopped
  • 1 teaspoon Ground white pepper
  • 2 teaspoons Salt
  • 1 teaspoon Sugar
  • 2 tablespoons Lime juice
  • 500 ml Vegetable oil (for frying)

Directions

Step 1

Clean the chicken pieces and pat them dry with paper towels.

Step 2

In a large mixing bowl, combine coconut milk, turmeric powder, coriander powder, galangal, lemongrass, kaffir lime leaves, minced garlic, chopped shallots, ground white pepper, salt, and sugar.

Add the chicken pieces to the bowl and mix thoroughly to ensure the chicken is well coated with the marinade.

Cover the bowl and let the chicken marinate in the refrigerator for at least 30 minutes, but ideally 1 hour for best results.

After marinating, transfer the chicken and the marinade into a large pot. Simmer on medium heat for about 25-30 minutes or until the chicken is cooked through. Stir occasionally.

Once cooked, remove the chicken pieces from the pot and let them cool slightly. Strain the marinade to remove any solid parts, if desired.
