Ingredients

  • 1 cup Sushi rice
  • 1.25 cups Water
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Sugar
  • 0.5 teaspoon Salt
  • 4 sheets Nori sheets
  • 2 whole Avocado
  • 1 medium Cucumber
  • 1 medium Carrot
  • 0.5 cup Mayonnaise (soy-free)
  • 2 tablespoons Sriracha sauce
  • 1 teaspoon Lemon juice

Directions

Step 1

Rinse the sushi rice under cold water until the water runs clear.

Step 2

In a pot, combine the rice and water, bring to a boil, then reduce the heat to low. Cover and simmer for 15 minutes, or until the water is absorbed.

Remove the pot from heat and let it sit, covered, for 10 more minutes.

In a small saucepan, combine rice vinegar, sugar, and salt. Heat until the sugar and salt dissolve. Remove from heat.

Transfer the cooked rice to a large bowl. Gradually add the vinegar mixture, folding the rice gently to mix. Allow to cool to room temperature.
