Preheat your oven to 400°F (200°C).
Prick the aubergines a few times with a fork and place on a baking sheet.
Roast the aubergines in the preheated oven for about 30 minutes or until the skin is charred and the flesh is very soft.
Remove the aubergines from the oven and let them cool slightly until they can be handled safely.
Once cool, cut the aubergines open and scoop out the flesh into a medium bowl, discarding the skin.
Add lemon juice, olive oil, peeled and minced garlic, tahini, ground cumin, salt, and black pepper to the bowl with the aubergine flesh.
Mash and mix the ingredients together until you achieve a smooth consistency.
