Ingredients

  • 2 large Aubergines (Eggplants)
  • 60 grams Tahini
  • 2 large Garlic cloves
  • 30 milliliters Lemon juice
  • 30 milliliters Olive oil
  • 5 grams Salt
  • 2 grams Ground cumin
  • 10 grams Parsley (optional, for garnish)
  • 30 grams Pomegranate seeds (optional, for garnish)

Directions

Step 1

Preheat your oven to 200°C (392°F).

Step 2

Prick the aubergines with a fork in several places to allow steam to escape as they cook.

Step 3

Place the aubergines on a baking sheet and roast in the oven for about 40-45 minutes, turning them occasionally, until the skins are charred and the flesh is very soft.

Step 4

Remove the roasted aubergines from the oven and let them cool slightly.

Step 5

While the aubergines cool, peel and mince the garlic cloves.

Step 6

Once the aubergines are cool enough to handle, split them open and scoop out the flesh with a spoon into a large mixing bowl, discarding the skin.

To the aubergine flesh, add tahini, minced garlic, lemon juice, olive oil, salt, and ground cumin.

Mash the mixture with a fork or potato masher until it is well combined and creamy, yet still has some texture. Adjust seasoning to taste.
