Ingredients

  • 2 pounds Fresh yuca (cassava) root
  • 1 teaspoon Salt
  • 0.5 cup Water
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter (or vegan butter)

Directions

Step 1

Peel the yuca using a sharp knife, removing the brown outer layer and the pinkish inner layer. Chop the peeled yuca into large chunks.

Place the yuca chunks into a large pot and cover with water. Add 1 teaspoon of salt to the water.

Bring the pot to a boil over medium-high heat, then reduce heat to a simmer. Cook for 15–20 minutes, or until the yuca is fork-tender.

Drain the cooked yuca and set aside to cool slightly. Once cool enough to handle, remove any tough, fibrous cores from the pieces.

In a large bowl, mash the yuca using a potato masher or fork until smooth. A few lumps are acceptable as they add texture to the arepas.
