Ingredients

  • 4 medium-sized potatoes
  • 0.5 cup green peas
  • 0.25 cup fresh coriander leaves
  • 1 small, finely chopped green chili
  • 1 inch piece, grated ginger
  • 1 teaspoon cumin seeds
  • 0.5 teaspoon red chili powder
  • 0.5 teaspoon garam masala powder
  • 0.5 teaspoon amchur (dried mango powder)
  • 1 teaspoon salt
  • 1 tablespoon cornflour
  • 0 for shallow frying oil

Directions

Step 1

Boil the potatoes in a large pot until they are fork-tender. Drain and let them cool slightly, then peel and mash them in a mixing bowl until smooth.

Step 2

In a small saucepan, boil the green peas for 3-4 minutes or until tender. Drain and slightly mash them using a fork.

Step 3

Add the mashed peas to the mashed potatoes. To this mixture, add the finely chopped coriander leaves, chopped green chili, grated ginger, cumin seeds, red chili powder, garam masala powder, amchur, and salt.

Step 4

Mix all the ingredients well until they are evenly combined.

Step 5

Add cornflour to the mixture to help bind it. Mix thoroughly.

Step 6

Divide the mixture into 10-12 equal portions. Shape each portion into a ball and then flatten it slightly to form a patty, ensuring the edges are smooth.

Step 7

Heat oil in a non-stick pan over medium heat. Once the oil is hot, carefully place the tikkis in the pan. Cook each side for about 3-4 minutes or until golden brown and crispy.

Step 8

Remove the cooked tikkis from the pan and place them on a paper towel-lined plate to drain excess oil.

Step 9

Serve the soy-free aloo tikki hot with mint chutney or tamarind sauce as a delightful snack.
