Ingredients

  • 2 cups sweet potatoes, peeled and cubed
  • 1 cup almond flour
  • 1 cup almond meal
  • 2 tablespoons ground flaxseeds
  • 6 tablespoons water
  • 0.25 teaspoon nutmeg
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon lemon zest

Directions

Step 1

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

Boil the sweet potatoes in a pot of salted water until tender, about 10-15 minutes. Drain and let them cool slightly.

Step 3

While the sweet potatoes are cooling, combine the ground flaxseeds and water in a small bowl. Stir well and let it sit for about 5 minutes until it gets thick and gelatinous.

Step 4

Mash the sweet potatoes in a large bowl until smooth. Add the flaxseed mixture, almond flour, nutmeg, salt, black pepper, parsley, and lemon zest. Mix until all the ingredients are well combined.

Step 5

Shape the sweet potato mixture into small croquette shapes (about 2 inches long).

Step 6

Take each croquette and coat it with the almond meal, pressing lightly to adhere.

Step 7

Heat the olive oil in a large non-stick skillet over medium heat. Once hot, place the croquettes in the skillet, working in batches if necessary to not overcrowd the pan.

Step 8

Cook the croquettes until golden brown on each side, about 3-4 minutes per side. Transfer the croquettes to the prepared baking sheet.

Step 9

Bake the croquettes in the preheated oven for 10-15 minutes to ensure they're heated through and the coating is well set.

Step 10

Serve the almond-crusted sweet potato croquettes warm, garnished with additional chopped parsley if desired.
