Ingredients

  • 4 pieces Salmon fillets
  • 1 large Lemon
  • 0.5 cup Fresh parsley
  • 0.25 cup Fresh dill
  • 2 large Garlic cloves
  • 2 tablespoons Olive oil
  • 0.5 cup Panko breadcrumbs
  • 1 teaspoon Kosher salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Lemon zest

Directions

Step 1

Preheat the air fryer to 390°F (200°C) for about 5 minutes.

Step 2

Rinse the salmon fillets under cold water and pat them dry with paper towels. Set them aside on a plate.

Step 3

Zest the large lemon to gather 1 teaspoon of zest, then cut it in half and squeeze out 2 tablespoons of lemon juice.

Step 4

In a food processor, combine the fresh parsley, fresh dill, garlic cloves, olive oil, lemon juice, panko breadcrumbs, kosher salt, black pepper, and lemon zest. Pulse until the mixture forms a coarse paste.

Step 5

Spread the lemon herb mixture evenly over the top of each salmon fillet, pressing it down gently to ensure it sticks.

Step 6

Lightly grease the air fryer basket with a bit of olive oil to prevent sticking, then carefully place the salmon fillets inside, ensuring they aren't overlapping.

Step 7

Air fry the salmon for 12 minutes or until the salmon is cooked through and the crust is golden and crispy.

Step 8

Remove the salmon from the air fryer and let it rest for a couple of minutes before serving.

Step 9

Serve hot and enjoy with your choice of sides, such as roasted vegetables or a fresh salad.
