Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 1 packet taco seasoning mix
  • 15 ounces canned black beans, drained and rinsed
  • 15 ounces canned corn, drained
  • 2 cups salsa
  • 6 pieces flour tortillas, large
  • 4 cups shredded Mexican blend cheese
  • 1 medium tomato, diced
  • 4 pieces green onions, chopped
  • 0.5 cup sour cream (optional for garnish)
  • 2 tablespoons cilantro, chopped (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula. Drain any excess grease.

Step 3

Add the diced onion to the skillet and sauté until softened, about 3-4 minutes.

Step 4

Stir in the taco seasoning mix, following the package instructions (typically adding about 2/3 cup of water), and cook until the mixture thickens.

Step 5

Add the black beans, corn, and 1 cup of salsa to the beef mixture. Stir to combine and simmer for 5 minutes.

Step 6

Lightly grease a 9x13-inch baking dish. Spread a thin layer of the remaining 1 cup of salsa on the bottom of the dish.

Step 7

Place two flour tortillas in the bottom of the dish, overlapping if needed, to cover the entire base.

Step 8

Spread 1/3 of the meat mixture over the tortillas, then sprinkle 1 cup of shredded cheese on top.

Step 9

Repeat the layers two more times: tortillas, meat mixture, and cheese, finishing with a generous layer of cheese on top.

Step 10

Cover the dish with aluminum foil (be sure the foil does not touch the cheese) and bake in the preheated oven for 20 minutes.

Step 11

Remove the foil and bake for an additional 10 minutes, or until the cheese is melted, bubbly, and slightly golden.

Step 12

Allow the lasagna to rest for 10 minutes before slicing and serving.

Step 13

Garnish with diced tomatoes, green onions, a dollop of sour cream, and chopped cilantro, if desired.
