Ingredients

  • 1 lb Ribeye or flank steak
  • 3 tbsp Olive oil
  • 2 tsp Chili powder

  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 6 cups Romaine lettuce
  • 1 cup Cherry tomatoes, halved
  • 1 cup Black beans, rinsed and drained
  • 1 cup Corn kernels (fresh, frozen, or canned)
  • 1 Avocado, diced
  • 0.5 Red onion, thinly sliced
  • 2 tbsp Fresh cilantro, chopped
  • 3 tbsp Lime juice
  • 1 tsp Honey
  • 1 clove Garlic, minced
  • 0.25 cup Crumbled cotija or feta cheese (optional)

Directions

Step 1

In a small bowl, mix together chili powder, cumin, garlic powder, paprika, salt, and black pepper.

Step 2

Rub the spice mixture onto both sides of the steak, pressing it into the meat evenly.

Step 3

Heat 2 tablespoons of olive oil in a large skillet or grill pan over medium-high heat. Once hot, add the steak and cook for 4-6 minutes per side for medium-rare (or cook to your preferred level of doneness).
