  • 2 medium yellow squash
  • 2 medium zucchini
  • 1 medium red bell pepper
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 cup cherry tomatoes
  • 3 cloves garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon lime juice
  • 2 tablespoons fresh cilantro

Directions

Step 1

Wash and dry all produce.

Slice the yellow squash and zucchini into thin rounds. Dice the red bell pepper into small pieces. Halve the cherry tomatoes. Mince the garlic and finely chop the cilantro.

Heat the olive oil in a large skillet over medium heat.
