  • 4 cups chicken broth
  • 1 can (15 ounces) fire-roasted diced tomatoes, with juices
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn kernels, fresh, frozen, or canned (drained)
  • 2 tablespoons lime juice, freshly squeezed
  • 0.25 cup fresh cilantro, chopped
  • 0 tortilla chips (for serving, optional)
  • 0 sour cream or plain Greek yogurt (for garnish, optional)
  • 0 shredded cheddar or Monterey Jack cheese (for garnish, optional)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.
