Ingredients

  • 1 pound smoked sausage
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 3 cloves minced garlic
  • 2 medium Russet potatoes, peeled and diced
  • 14.5 ounces canned diced tomatoes with green chilies
  • 4 cups low-sodium chicken broth
  • 1 cup frozen corn kernels
  • 1 15-ounce can black beans, drained and rinsed
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 0.5 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh cilantro, chopped
  • 1 whole lime, cut into wedges (optional for serving)

Directions

Step 1

Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium heat.

Step 2

Slice the smoked sausage into 1/2-inch rounds. Add them to the pot and cook for 3-5 minutes, stirring occasionally, until lightly browned. Remove the sausage from the pot and set aside.

Step 3

Add the diced onion to the same pot and sauté for 2-3 minutes until softened and translucent.

Step 4

Stir in the diced red and green bell peppers, cooking for another 3 minutes, until just tender.

Step 5

Add the minced garlic and cook for 30 seconds, stirring continuously, until fragrant.

Step 6

Add the diced potatoes, canned diced tomatoes with green chilies (including the juice), and chicken broth to the pot. Stir well to combine.

Step 7

Return the browned sausage to the pot, followed by the ground cumin, smoked paprika, chili powder, oregano, salt, and black pepper. Stir to evenly distribute the spices.

Step 8

Bring the stew to a gentle boil over medium-high heat, then reduce the heat to low. Cover the pot and let it simmer for 25-30 minutes, stirring occasionally, until the potatoes are tender.

Step 9

Stir in the frozen corn and black beans, and cook uncovered for an additional 5 minutes to heat through.

Step 10

Taste and adjust seasoning, if needed.

Step 11

Stir in the chopped cilantro just before serving for a burst of fresh flavor.

Step 12

Serve the stew hot with lime wedges on the side for an optional tangy finish.
