Ingredients

  • 4 cups fresh or frozen corn kernels
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 medium red bell pepper, diced
  • 1 small jalapeño, finely chopped and seeds removed
  • 2 medium garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon freshly ground black pepper
  • 2 tablespoons lime juice
  • 0.25 cup cilantro, chopped
  • 2 stalks green onions, sliced

Directions

Step 1

Heat a large skillet over medium heat. Add olive oil and butter, letting the butter melt completely.

Step 2

Once the butter is melted and the oil is hot, add the diced red bell pepper and chopped jalapeño to the skillet. Sauté for 3-4 minutes, or until the vegetables soften.

Step 3

Add the minced garlic to the skillet and cook for 30 seconds, stirring constantly to prevent burning.

Step 4

Stir in the corn kernels along with the ground cumin, smoked paprika, salt, and black pepper. Mix everything well to ensure the spices are evenly distributed.

Step 5

Increase the heat to medium-high and cook the mixture for 6-8 minutes, stirring occasionally. Allow some of the corn to achieve a light golden-brown char for added flavor.

Step 6

Remove the skillet from heat and stir in the lime juice, chopped cilantro, and sliced green onions. Mix until well combined.

Step 7

Taste and adjust seasoning, adding more salt or lime juice if needed.

Step 8

Serve warm as a side dish or over tacos, grilled meats, or salads.
