  • 4 large Russet potatoes
  • 4 tablespoons Butter

  • 3 cups Cooked shredded chicken
  • 1 medium, diced Yellow onion
  • 1 medium, diced Red bell pepper
  • 1 cup Black beans
  • 1 cup Frozen corn kernels
  • 2 cloves, minced Garlic
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 0.25 teaspoon Cayenne pepper
  • 3 tablespoons Tomato paste
  • 0.5 cup Chicken broth
  • 0.75 cup Shredded cheddar cheese

Directions

Step 1

Peel and dice the russet potatoes into chunks. Place them in a pot of salted water and bring to a boil over medium-high heat. Cook for about 15 minutes, or until the potatoes are fork-tender.

Drain the potatoes and return them to the pot. Add butter, milk, chili powder, and salt. Mash until smooth and set aside.
