Ingredients

  • 3 pounds Beef brisket
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1.5 tablespoons Chili powder
  • 1 tablespoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, diced
  • 1.5 cups Beef broth
  • 1 cup Crushed tomatoes
  • 2 tablespoons Apple cider vinegar
  • 2 tablespoons Brown sugar
  • 2 tablespoons Chipotle in adobo sauce
  • 6 Brioche buns
  • 2 cups Shredded cabbage
  • 1 medium Carrot, shredded
  • 1.5 tablespoons Mayonnaise
  • 1 tablespoon Lime juice
  • 1 teaspoon Honey
  • 0.25 teaspoon Salt (for slaw)
  • 0.25 teaspoon Pepper (for slaw)

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Trim any excess fat from the brisket and pat it dry with paper towels.

Step 3

Combine salt, pepper, chili powder, cumin, smoked paprika, garlic powder, and onion powder in a small bowl. Rub this spice mixture all over the brisket.

Step 4

In a large Dutch oven or any heavy oven-safe pot, heat olive oil over medium-high heat. Sear the brisket on all sides until browned, about 3-4 minutes per side. Remove the brisket and set it aside.

Step 5

In the same pot, add the diced onion and sauté for 3-4 minutes until softened. Add the beef broth, crushed tomatoes, apple cider vinegar, brown sugar, and chipotle in adobo sauce. Stir well to combine.

Step 6

Return the seared brisket to the pot, spooning some of the sauce over the top. Cover with a lid and place in the preheated oven. Cook for 4-5 hours or until the brisket is fork-tender.

Step 7

Once cooked, remove the brisket from the sauce and use two forks to shred it into bite-sized pieces. Return the shredded brisket to the sauce and stir to combine.

Step 8

To prepare the slaw, combine shredded cabbage, carrot, mayonnaise, lime juice, honey, salt, and pepper in a large bowl. Toss until evenly coated.

Step 9

Toast the brioche buns lightly if desired. Scoop a generous portion of pulled brisket onto the bottom bun, top with chipotle slaw, and cover with the top bun.

Step 10

Serve immediately and enjoy your Southwestern Pulled Brisket Sandwiches!
