Ingredients

  • 12 oz penne pasta
  • 2 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 2 tbsp tomato paste
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 0.5 tsp cayenne pepper (optional)
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 0.25 cup cilantro, chopped (for garnish)
  • 1 tsp (adjust to taste) salt
  • 0.5 tsp black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Drain and set aside.

Step 2

Heat the olive oil in a large skillet or sauté pan over medium heat.

Step 3

Add the diced onion and cook for 3-4 minutes, stirring occasionally, until softened.

Step 4

Stir in the minced garlic and cook for 1 minute, until fragrant.

Step 5

Add the diced red and green bell peppers to the skillet. Cook for 5 minutes, stirring occasionally, until the peppers have softened.

Step 6

Stir in the black beans, corn kernels, and tomato paste. Mix well to combine.

Step 7

Sprinkle the chili powder, cumin, smoked paprika, cayenne (if using), salt, and black pepper over the vegetable mixture. Stir to evenly coat the ingredients with the spices.

Step 8

Reduce the heat to low and pour in the heavy cream, stirring to create a creamy sauce.

Step 9

Add the shredded cheddar cheese and stir until it melts and the sauce becomes smooth.

Step 10

Add the cooked pasta to the skillet, tossing to coat the pasta evenly with the sauce.

Step 11

Cook for 2-3 minutes, allowing the flavors to meld together. Adjust seasoning with additional salt and pepper, if needed.

Step 12

Remove from heat and garnish with chopped cilantro before serving.
