Ingredients

  • 2 large yellow onions
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 1 cup cornmeal
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1.5 teaspoons salt
  • 0.5 teaspoon ground black pepper
  • 2 large eggs
  • 4 cups vegetable oil (for frying)

Directions

Step 1

Peel the onions and slice them into thick rings, approximately 1/2 inch wide. Separate the rings and set aside.

Step 2

Soak the onion rings in buttermilk in a large bowl for at least 15 minutes. This helps tenderize the onions and enhances the flavor.

Step 3

In a medium bowl, whisk together the all-purpose flour, cornstarch, cornmeal, smoked paprika, ground cumin, chili powder, garlic powder, onion powder, salt, and black pepper.

Step 4

In another small bowl, beat the eggs until frothy.

Step 5

Remove the onion rings from the buttermilk, letting the excess liquid drip off. Dip each ring into the flour mixture, then into the beaten eggs, and finally back into the flour mixture to coat evenly. Shake off any excess coating.

Step 6

Heat the vegetable oil in a large, deep pan or Dutch oven to 350°F (175°C). Use a thermometer to maintain the proper temperature.

Step 7

Carefully place a few coated onion rings into the hot oil, making sure not to overcrowd the pan. Fry the rings for 2–3 minutes on each side, or until they are golden brown and crispy.

Step 8

Use a slotted spoon to remove the onion rings from the oil and place them on a plate lined with paper towels to drain excess oil.

Step 9

Repeat the frying process with the remaining onion rings, reheating the oil to 350°F between batches if necessary.

Step 10

Serve the Southwestern Onion Rings warm with your favorite dipping sauce, such as chipotle mayo or ranch dressing, and enjoy!
