Ingredients

  • 4 large eggs
  • 2 tablespoons milk
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon olive oil
  • 0.5 small, diced red bell pepper
  • 0.5 small, diced green bell pepper
  • 0.25 small, diced red onion
  • 1 small, seeded and finely chopped jalapeño
  • 0.5 cup, shredded cheddar cheese
  • 2 tablespoons, chopped cilantro
  • 0.25 cup (optional, for serving) salsa

Directions

Step 1

In a medium mixing bowl, whisk together the eggs, milk, salt, and black pepper until fully combined and slightly frothy.

Step 2

Heat a non-stick skillet over medium heat and add the olive oil. Swirl the pan to coat evenly.

Step 3

Add the diced red bell pepper, green bell pepper, red onion, and jalapeño to the skillet. Sauté for 3–4 minutes, stirring occasionally, until the vegetables are slightly softened.

Step 4

Reduce the heat to medium-low and pour the egg mixture into the skillet, tilting the pan gently to spread the eggs evenly over the vegetables.

Step 5

Cook the eggs undisturbed for 3–4 minutes or until the edges begin to set.

Step 6

Sprinkle the shredded cheddar cheese evenly over one half of the omelet, then carefully fold the other half of the omelet over the cheese using a spatula.

Step 7

Continue cooking for 1–2 minutes or until the cheese is melted and the eggs are cooked through but still soft.

Step 8

Slide the omelet onto a serving plate and garnish with chopped cilantro.

Step 9

Serve immediately with salsa on the side if desired.
