Ingredients

  • 1 cup dry green or brown lentils
  • 3 cups water
  • 1 teaspoon salt
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 0.25 cup red onion, finely diced
  • 0.25 cup cilantro, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon black pepper
  • 1 avocado, diced

Directions

Step 1

Rinse the lentils thoroughly under cold water. Add them to a medium-sized pot with 3 cups of water and 1 teaspoon of salt.

Step 2

Bring the water to a boil, then reduce the heat to low and let the lentils simmer uncovered for about 20-25 minutes, or until they are tender but not mushy.

Step 3

Drain the lentils and let them cool to room temperature.

In a large mixing bowl, combine the cooked lentils, black beans, corn, cherry tomatoes, red bell pepper, red onion, and chopped cilantro.
