  • 1 cup Frozen corn kernels
  • 1 cup Black beans (drained and rinsed)
  • 1 cup Fresh spinach (chopped)
  • 1 cup Shredded Monterey Jack cheese
  • 1 cup Chopped red bell pepper
  • 0.5 cup Chopped green onions
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Cayenne pepper
  • 20 pieces Large egg roll wrappers
  • 4 cups Vegetable oil (for frying)

Directions

Step 1

In a large mixing bowl, combine the cooked chicken, corn, black beans, spinach, shredded cheese, red bell pepper, green onions, cumin, chili powder, salt, and cayenne pepper. Mix until well combined.

Step 2

Lay an egg roll wrapper on a clean surface with one corner pointing toward you (like a diamond shape). Spoon about 2-3 tablespoons of the filling into the center of the wrapper.

Step 3

Fold the bottom corner of the wrapper up and over the filling tightly. Then fold in the left and right corners toward the center to enclose the filling. Roll upward tightly to seal the egg roll, using a bit of water on the top corner to seal the edge. Repeat with remaining wrappers and filling.

Step 4

Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). You’ll need enough oil to fully submerge the egg rolls.

Step 5

Carefully place the egg rolls into the hot oil a few at a time, making sure not to overcrowd the pan. Fry for about 2-3 minutes, turning occasionally, until the egg rolls are golden brown and crispy.
