Ingredients

  • 10 pieces large eggs
  • 1 cup whole milk
  • 1 pound breakfast sausage (ground or links, casings removed)
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 1 medium yellow onion, diced
  • 4 ounces canned diced green chilies (mild or hot)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 4 large tortillas (cut into small squares or strips)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons fresh cilantro, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with non-stick spray or a light coating of olive oil.

Step 2

In a large skillet over medium-high heat, add the olive oil. Once hot, cook and crumble the sausage until browned and fully cooked, about 5-7 minutes. Drain excess grease and set the sausage aside.

Step 3

In the same skillet, add the diced onions and bell peppers. Cook, stirring occasionally, for 3-4 minutes until soft. Stir in the diced green chilies, cumin, chili powder, garlic powder, salt, and pepper. Cook for another minute, then remove from heat.

Step 4

In a large mixing bowl, whisk together the eggs and milk until fully combined.

Step 5

To the greased baking dish, layer half of the tortilla pieces on the bottom. Spread half of the cooked sausage and half of the vegetable mixture evenly over the tortillas. Sprinkle with half of the cheddar and pepper jack cheese.

Step 6

Repeat the layering process with the remaining tortillas, sausage, vegetables, and cheeses.

Step 7

Pour the egg and milk mixture evenly over the layered ingredients, ensuring it soaks through to the bottom.

Step 8

Cover the casserole with aluminum foil and bake for 25 minutes. Then, remove the foil and bake uncovered for another 15 minutes, or until the eggs are fully set and the top is golden and bubbly.

Step 9

Remove the casserole from the oven and let it rest for 5 minutes before slicing and serving. Garnish with fresh cilantro, if desired.
