Ingredients

  • 4 pieces (approximately 4 oz each) boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 2 teaspoons minced garlic
  • 1 cup canned black beans, rinsed and drained
  • 1 cup frozen corn kernels
  • 1 14.5 oz can diced tomatoes with green chilies (Rotel-style)
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 0.5 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons chopped fresh cilantro
  • 4 wedges (for garnish) lime wedges

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Season the chicken breasts with a pinch of salt and pepper. Add them to the skillet and cook for 5-6 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Step 3

In the same skillet, add the onion and bell peppers. Sauté for 5-7 minutes, or until softened.

Step 4

Stir in the minced garlic and cook for 1 minute, until fragrant.

Step 5

Add the black beans, frozen corn, diced tomatoes with green chilies, chili powder, cumin, paprika, salt, and black pepper. Stir to combine.

Step 6

Reduce the heat to medium-low, cover, and let the mixture simmer for 10 minutes to allow the flavors to meld.

Step 7

Slice the cooked chicken breasts into thin strips and return them to the skillet. Stir gently to coat the chicken in the sauce.

Step 8

Sprinkle chopped cilantro over the skillet and serve immediately with lime wedges on the side. Enjoy!
