Ingredients

  • 2 pieces boneless, skinless chicken breasts

  • 1 cup black beans (rinsed and drained)
  • 0.5 piece red onion
  • 1 piece avocado
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup cilantro (chopped)
  • 2 tablespoons lime juice
  • 1 teaspoon honey
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat a grill or grill pan over medium-high heat.

Step 2

Rub the chicken breasts with 1 tablespoon of olive oil and sprinkle the taco seasoning evenly over both sides.

Grill the chicken for 5-6 minutes per side, or until the internal temperature reaches 165°F (74°C). Remove the chicken from the grill, let it rest for 5 minutes, then slice it into thin strips.
