Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 pieces Ciabatta rolls
  • 4 slices Cheddar cheese, sliced
  • 1 large piece Tomato, sliced
  • 1 medium piece Avocado, sliced
  • 0.5 cup Fresh cilantro leaves
  • 0.5 cup Mayonnaise
  • 1 piece Chipotle chili in adobo sauce, minced
  • 1 tablespoon Fresh lime juice
  • 2 tablespoons Butter

Directions

Step 1

Preheat a grill pan or outdoor grill over medium-high heat.

Step 2

In a bowl, mix olive oil, cumin, chili powder, salt, and black pepper. Rub this mixture onto the chicken breasts.

Grill the chicken for 5-6 minutes per side, or until fully cooked and juices run clear. Remove from grill and let rest for 5 minutes before slicing into thin strips.
