  • 1 can (10 oz) Diced tomatoes with green chilies (such as Rotel)
  • 1 cup Tomato sauce
  • 1 tablespoon Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Cooked white or brown rice
  • 2 cups Shredded cheddar cheese
  • 0.25 cup Chopped fresh cilantro (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet over medium-high heat, cook the ground beef until it is browned and fully cooked. Drain any excess grease.

Add the diced onion and minced garlic to the skillet and sauté for about 3 minutes, until the onion is softened and the garlic is fragrant.
