Ingredients

  • 1 9-inch shell Frozen pie crust
  • 2 cups Broccoli florets
  • 4 large Eggs
  • 1 cup Half-and-half
  • 1 cup Shredded Mexican blend cheese
  • 0.5 cup Canned diced green chilies
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 teaspoon Olive oil
  • 0.5 cup, diced Onion

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

If your pie crust is frozen, thaw it according to the package instructions.

Step 3

Steam the broccoli florets for 5 minutes, or until tender, then roughly chop them into smaller pieces. Set aside.

Step 4

Heat olive oil in a small skillet over medium heat. Add the diced onion and sauté until softened, about 3-4 minutes. Remove from heat and set aside to cool slightly.

Step 5

In a large mixing bowl, whisk together the eggs, half-and-half, ground cumin, chili powder, salt, and black pepper until the mixture is well combined.

Step 6

Stir in the shredded Mexican blend cheese, diced green chilies, steamed broccoli, and sautéed onions into the egg mixture.

Step 7

Pour the mixture into the pie crust, spreading it out evenly.

Step 8

Place the quiche on the middle rack of the preheated oven. Bake for 40-45 minutes, or until the center of the quiche is set and the top is lightly golden.

Step 9

Remove the quiche from the oven and let it rest for 5-10 minutes before slicing and serving.

Step 10

Serve warm and enjoy your Southwestern Broccoli Quiche!
