  • 1 cup frozen corn kernels
  • 1 cup long-grain white rice, uncooked
  • 2 cups chicken or beef broth
  • 1 cup shredded cheddar cheese
  • 0.25 cup fresh cilantro, chopped (optional)
  • 1 lime wedges (for serving)

Directions

Step 1

Heat a large skillet over medium-high heat. Add the olive oil and ground beef, breaking up the meat with a spoon. Cook until browned, about 5 minutes. Drain any excess grease if needed.
