  • 10 ounces (1 can, undrained) diced tomatoes with green chilies
  • 2 cups cooked white or brown rice
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoon black pepper
  • 1.5 cups (divided) shredded Mexican blend cheese
  • 2 sliced green onions
  • 0.25 cup (chopped, optional) fresh cilantro

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch casserole dish.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the diced red and green bell peppers and onion. Sauté for approximately 5 minutes, or until softened.
