Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 0.5 cups black beans (canned, drained and rinsed)
  • 0.5 cups corn (canned or fresh)
  • 1 cups shredded pepper jack cheese
  • 4 ounces cream cheese (softened)
  • 2 tablespoons chopped cilantro (optional)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a baking dish.

Step 2

Place the chicken breasts on a clean cutting board. Using a sharp knife, carefully slice a pocket into the thickest side of each chicken breast, ensuring you don’t cut all the way through.

Step 3

In a medium bowl, mix together the black beans, corn, shredded pepper jack cheese, cream cheese, cilantro, chili powder, cumin, garlic powder, paprika, salt, and black pepper until well combined.

Step 4

Stuff each chicken breast with the prepared filling, making sure to evenly distribute it among the four breasts. Use toothpicks to secure the openings if necessary.

Step 5

Rub the outside of each chicken breast with a light coat of olive oil and sprinkle with a little additional chili powder and paprika for extra color and flavor.

Step 6

Place the stuffed chicken breasts in the greased baking dish and bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

Step 7

Remove the baking dish from the oven and let the chicken rest for 5 minutes before serving.

Step 8

Serve hot with a side of rice, a fresh green salad, or your favorite Southwest-style accompaniments. Optionally, garnish with additional chopped cilantro or a dollop of sour cream.
