Ingredients

  • 1 pound lean ground turkey or chicken
  • 2 large sweet potatoes
  • 2 teaspoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 medium red bell pepper, diced
  • 1 cup black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 1 cup diced tomatoes, canned (with juices)
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon ground black pepper
  • 0.25 cup low-fat milk
  • 0.5 cup light shredded cheese (optional)
  • 0 to taste salt
  • 2 tablespoons fresh cilantro, chopped (optional garnish)

Directions

Step 1

Peel and dice the sweet potatoes into large chunks. Place them in a pot of boiling water and cook for 15-20 minutes or until fork-tender.

Step 2

While the potatoes are cooking, heat 2 teaspoons of olive oil in a large skillet over medium heat. Add the diced onion and minced garlic; sauté for 2-3 minutes until fragrant.

Step 3

Add the ground turkey or chicken to the skillet. Cook for 5-7 minutes, breaking it apart with a spoon until fully browned.

Stir in the diced red bell pepper, black beans, corn, and canned diced tomatoes (with juices). Cook for another 2-3 minutes.

Add chili powder, ground cumin, paprika, ground black pepper, and salt to taste. Stir to combine and simmer for 5 minutes to meld flavors.

Preheat your oven to 375°F (190°C).

Once the sweet potatoes are tender, drain and mash them in a large bowl. Add 1/4 cup of low-fat milk, a pinch of salt, and mash until smooth and creamy.

Spread the meat and vegetable mixture evenly in the bottom of a lightly greased baking dish (8x8 inches works well).

Spread the mashed sweet potatoes over the top of the meat mixture, smoothing it out with a spatula or spoon. For extra flavor, sprinkle light shredded cheese over the top if desired.

Bake in the preheated oven for 20 minutes, or until the filling is bubbly and the top is lightly golden. If you added cheese, it should be melted and slightly browned.

Remove from the oven and let it cool for 5 minutes. Garnish with fresh chopped cilantro if desired and serve warm.
