  • 2 tablespoons, chopped fresh cilantro
  • 0.5 teaspoon ground cumin
  • 0.25 teaspoon chili powder
  • 1 small, sliced (optional) avocado
  • 1 tablespoon (optional) hot sauce
  • 4 small (optional for serving) tortillas

Directions

Step 1

In a medium bowl, whisk together the eggs, milk, salt, and black pepper until fully combined. Set aside.

Step 2

Heat the olive oil in a large non-stick skillet over medium heat.

Add the diced red bell pepper and onion to the skillet. Cook for 3-4 minutes, stirring frequently, until the vegetables are softened.
