Ingredients

  • 4 cups fresh or frozen corn kernels
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 red onion, finely chopped
  • 1 jalapeño, finely diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoons chili powder
  • 1 tablespoon fresh lime juice
  • 2 tablespoons fresh cilantro, chopped
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Heat a large skillet over medium-high heat and add the olive oil.

Step 2

Once the oil is hot, add the diced red bell pepper, green bell pepper, and red onion. Sauté for 3-4 minutes, until the vegetables begin to soften.

Step 3

Stir in the diced jalapeño and minced garlic. Cook for an additional 1-2 minutes until fragrant.

Step 4

Add the corn kernels (if using frozen, no need to thaw beforehand) to the skillet and toss to combine. Cook for 5-6 minutes, stirring occasionally, until the corn is tender and beginning to caramelize.

Step 5

Sprinkle the cumin, smoked paprika, chili powder, salt, and black pepper over the corn mixture. Stir well to evenly coat the vegetables with the spices.

Step 6

Remove the skillet from the heat and stir in the fresh lime juice and chopped cilantro.

Step 7

Taste and adjust seasoning if needed. Serve warm as a side dish or a topping for tacos or salads.
