Ingredients

  • 2 large portabella mushrooms
  • 2 tablespoons olive oil

  • 4 whole wheat tortillas
  • 1 cup black beans (canned, rinsed and drained)
  • 2 cups fresh spinach
  • 1 cup shredded cheddar cheese (optional)
  • 1 ripe avocado, sliced
  • 0.5 red onion, thinly sliced
  • 0.5 cup Greek yogurt (or sour cream)
  • 1 tablespoon lime juice
  • 1 teaspoon hot sauce

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Gently wipe the portabella mushrooms with a damp towel to clean them, then remove the stems and gills using a small spoon.

Step 3

In a small bowl, mix olive oil, smoked paprika, cumin, salt, and black pepper. Brush this mixture onto both sides of the mushrooms.

Place the mushrooms on a baking sheet lined with parchment paper, gill side down, and roast in the oven for 12-15 minutes or until tender. Once roasted, slice them into thin strips.
