  • 0.5 pound Ground pork
  • 0.75 cup Breadcrumbs
  • 1 large Egg
  • 2 pepper (chopped) Chipotle peppers in adobo sauce
  • 1 tablespoon Adobo sauce
  • 3 cloves (minced) Garlic
  • 0.25 cup (finely chopped) Cilantro
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Lime zest
  • 2 tablespoons Vegetable oil

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Step 2

In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, egg, chipotle peppers, adobo sauce, minced garlic, chopped cilantro, cumin, chili powder, salt, black pepper, and lime zest.

Mix everything gently but thoroughly using your hands or a wooden spoon until the mixture comes together evenly. Be careful not to overmix as it can make the meatballs dense.
