Ingredients

  • 1 lb Flat iron steak
  • 2 tbsp Olive oil
  • 2 tbsp Lime juice
  • 1 tsp Ground cumin
  • 1.5 tsp Chili powder
  • 1 tsp Smoked paprika
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
  • 1 Jalapeño, finely chopped
  • 2 tbsp Fresh cilantro, chopped

Directions

Step 1

In a small bowl, combine olive oil, lime juice, ground cumin, chili powder, smoked paprika, garlic powder, onion powder, salt, black pepper, jalapeño, and cilantro to form a marinade.

Step 2

Place the flat iron steak in a resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it is evenly coated. Marinate in the refrigerator for at least 2 hours, preferably overnight, for maximum flavor.

Step 3

Remove the steak from the refrigerator 30 minutes prior to cooking to allow it to come to room temperature.

Step 4

Preheat a grill or grill pan to medium-high heat. Lightly oil the grates to prevent sticking.

Step 5

Remove the steak from the marinade, letting any excess drip off, and discard the remaining marinade.

Step 6

Place the steak on the preheated grill and cook for about 4-5 minutes per side for medium-rare, or until your desired level of doneness is reached. Use a meat thermometer for accuracy (135°F for medium-rare, 145°F for medium).

Step 7

Remove the steak from the grill and allow it to rest for 5-10 minutes to retain its juices.

Step 8

Slice the steak thinly against the grain and serve immediately. Garnish with extra cilantro, if desired. Pair with grilled vegetables, rice, or tortillas for a complete Southwest-inspired meal.
