  • 1 cup Boneless, skinless chicken breast (cooked and shredded)
  • 1 cup Black beans (rinsed and drained)
  • 1 cup Frozen corn (thawed)
  • 0.5 cup Red bell pepper (diced)
  • 0.25 cup Green onions (chopped)
  • 0.5 cup Shredded cheddar or Monterey Jack cheese
  • 2 tablespoons Cilantro (chopped)
  • 1 teaspoon Chili powder
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 10 Egg roll wrappers
  • 0 Cooking spray

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

Step 2

In a large skillet over medium heat, heat the olive oil. Add the diced red bell pepper and cook for 2-3 minutes until slightly softened.

In a large mixing bowl, combine the cooked chicken, black beans, corn, cooked red bell pepper, green onions, shredded cheese, cilantro, chili powder, cumin, garlic powder, and salt. Mix well to evenly distribute the ingredients.
