  • 15 oz (1 can, drained) Sweet corn kernels

  • 0.25 cup (chopped) Cilantro
  • 2 tbsp Lime juice
  • 1 tbsp Olive oil
  • 1 tsp Ground cumin
  • 1 tsp Chili powder
  • 0.5 tsp Garlic powder
  • 0.5 tsp (or to taste) Salt
  • 1 small (seeded and finely diced, optional) Jalapeño

Directions

Step 1

In a large mixing bowl, combine the black beans, corn, and diced tomatoes with green chilies. Ensure all are well-drained to avoid excess liquid in the dip.

Step 2

Add the finely chopped red onion, cilantro, and optional jalapeño to the bowl.

Step 3

In a small bowl, whisk together the lime juice, olive oil, ground cumin, chili powder, garlic powder, and salt to create the dressing.

Pour the dressing over the bean and corn mixture.
