  • 1 cup corn kernels, drained if canned
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • 2 cups tortilla chips, crushed
  • 0.25 cup chopped cilantro (optional, for garnish)
  • 0.5 cup sour cream (optional, for serving)
  • 0.25 cup sliced jalapeños (optional, for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart with a wooden spoon.

Add the diced onion and minced garlic to the skillet. Sauté until the onion is soft and translucent, about 3-4 minutes.
