  • 1 lb boneless, skinless chicken breasts

  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 jalapeño, finely diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 2 tomatoes, diced
  • 1 cup shredded cheddar cheese
  • 2 tbsp fresh cilantro, chopped
  • 1 lime, cut into wedges (for serving)

Directions

Step 1

Cut the chicken breasts into bite-sized pieces and season with salt, black pepper, chili powder, cumin, paprika, garlic powder, and onion powder.

In a large skillet, heat the olive oil over medium-high heat.

Add the seasoned chicken to the skillet and cook for 5-7 minutes until browned and cooked through. Remove the chicken from the skillet and set aside.
