  • 2 tablespoons mayonnaise
  • 1 cup spinach or lettuce
  • 1 large (sliced) tomato

Directions

Step 1

In a large mixing bowl, combine the ground chicken, diced red bell pepper, sliced scallions, minced garlic, ground cumin, chili powder, smoked paprika, salt, and black pepper. Mix until just combined. Avoid overmixing.

Divide the chicken mixture into 4 equal portions and shape them into patties about 1/2-inch thick.
