Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 1 teaspoon Ground black pepper
  • 1 teaspoon Chili powder
  • 1 teaspoon Ground cumin
  • 2 tablespoons Vegetable oil
  • 1 cup Black beans, drained and rinsed
  • 1 cup Sweet corn kernels (canned or frozen)
  • 1 half Diced red bell pepper
  • 1 cup Shredded cheddar cheese
  • 2 tablespoons Diced green onions
  • 2 tablespoons Cilantro, chopped
  • 1 can Refrigerated crescent roll dough
  • 1 large Egg (for egg wash)
  • 1 tablespoon Water

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

Step 2

Season the chicken breasts with salt, black pepper, chili powder, and ground cumin on both sides.

Step 3

Heat the vegetable oil in a skillet over medium heat. Cook the chicken breasts for 4-5 minutes per side, or until they are no longer pink in the center. Remove from the skillet, let them cool, and dice them into small cubes.

Step 4

In a large mixing bowl, combine the diced chicken, black beans, corn, diced red bell pepper, shredded cheddar cheese, green onions, and cilantro. Mix until evenly combined.

Unroll the crescent roll dough and separate it into 4 rectangular sheets by pressing the perforations together. Roll each sheet out slightly with a rolling pin to make it a little larger.
